Factions

With the spread of Sushi all across Japan, this kind of food has experienced a lot of improvement and variation.  But in general, there are two main factions of Sushi, one is the Edo style which is also called nigiri-zushi. This kind of sushi is popular around Kyoto (Now is named Tokyo). Another one is the Kansai style which is known as the Hako-zushi which is quite popular among the Osaka people.

  1 Edo style:

   The Edo style is known as the nigiri-zushi which require the maker to use the hands to shape the vinegared rice into a small piece and then spread a thin layer of Wasabi (a kind of green Japanese mustard). In the end, the maker can put many different kinds of ingredients on top of the rice based on the preference of the customers.

  2 Kansai style:

   The Kansai style can also be named Hakozushi. The Sushi maker will put the rice into an wooden box and cover the rice with all sorts of seafood, fish and some other ingredients. The maker will shape the hakozushi with heavy pressure on top and cut the rice into smaller pieces. The shape of the rice is like a box. So the Kansai style is also named “box-style”. The most representative shops can be fund around Osaka.
